YUMtastic!: Fried Beets

A wonderful substitute for fried potatoes!

What you will need......
#1.  3 to 4 organic beets (these don't have to be organic, but let me tell you, the color, the smell, the taste...can't compare!)
#2.  Maple Bacon Grease 
(this is the secret, now of course you don't have to use this but the taste is to die for! I buy my organic bacon and either buy it already maple flavored or I just fry the bacon with a little maple syrup in the pan! I of course usually couple the beets and bacon for an outstandingly divine breakfast!) YUMtastic!
#3.  Sea Salt

That's it!

Now start by slicing the beets...DO NOT PEEL THEM! They don't need to be peeled, beets are one of those amazing foods that actually holds a large portion of healthy antioxidants and vitamins in their skin, plus the skin all crisped up is super de dooper YUMtastic!

I like my beets tender but kind of firm, so I do not boil them before hand to soften them, however if ya like em softer I suggest about 10 to 15 minutes of boiling before frying them up. Note that you can also bake them, but honestly...they don't taste as awesome.

Place the slices of beet into the pan with the grease and begin frying on medium to low heat. Cover for a little and let them cook, meanwhile going back and flipping them every so often for about 20 to 30 minutes.

Cook them to your tenderness liking and then toss some sea salt, once again to your taste all over them as they dry and drain on a paper towel or in a straining bowl. omg so YUMTASTIC!

NOW SERVE THEM! Couple them with bacon, sausage, tofu, whatever your taste suggest! <3 Once again this is a paleo food, and despite being fried, it is not actually unhealthy! Be sure to google the truth behind fats and how our bodies need them as well as the benefits of eating beets with the peel on to be sure for yourself :)
